Chocolate cake in 5 Minutes

I love chocolate and, if you are reading this, I think you might too. We have allergies in our household, though, so its nice to have options when it comes to recipes. This recipe is also simple enough for the kids to try. Be aware that most commercial chocolate bars/chips have wheat/soya in, so be sure to check the label if you plan on using them in your cake.

Egg replacements

When it comes to eggs, you can replace them with a number of ingredients depending on what function they play in the recipe. In most recipes, eggs play one of 3 roles: to leaven, to bind, and/or to add moisture. They can also be used for colour, flavour, and richness. If you have an egg allergy or intolerance, bananas can be used when egg is used to add moisture to a recipe. Chia seeds, Psyllium husks and Flax seeds can be used when the purpose of the egg is to bind (add 1 tbsp to 3 tbsp water and allow to rest/gel). You can use vegetable oil, water and baking powder when the purpose of the egg in the recipe is for leavening (1 & 1/2 tbsp vegetable oil mixed with 1 & 1/2 tablespoons water and 1 tsp baking powder).

Recipe

Ingredients

  • 2 tbsp flour
  • 2 tbsp sugar
  • 1 tbsp cocoa
  • Half an egg (whisked)
  • 1 1/2 tbsp milk
  • 1 1/2 tbsp oil
  • a splash of vanilla essence/extract
  • chocolate chips

Instructions

  1. Add dry ingredients to mug.
  2. Mix well.
  3. Add egg and mix again.
  4. Pour in the milk & oil and mix well.
  5. Add chocolate chips (if using) and vanilla.
  6. Mix again.
  7. Put your mug in the microwave and cook your mug cake on high for 2 minutes (you can also double this recipe and your cooking time then will be 3 minutes).
  8. Enjoy!

Allergy-friendly Recipe

Ingredients

  • 1 tbsp rice flour
  • 1 tbsp potato starch/flour
  • 2 tbsp sugar
  • 1 tbsp cocoa
  • 1 tsp flax seed powder
  • 1 tsp psyllium husk powder
  • 4 tbsp milk
  • 1 1/2 tbsp oil
  • a splash of Vanilla essence/extract
  • peanut butter (if no allergies to peanuts)

Instructions

  1. Add dry ingredients to mug.
  2. Mix well.
  3. Pour in the milk & oil and mix well.
  4. Add vanilla and mix again.
  5. Drop a spoon of peanut butter (if using) in your mug. Don’t mix!
  6. Put your mug in the microwave and cook your mug cake on high for 2 minutes.
  7. Enjoy!
