Chia Seed Pudding

Firstly, if you haven’t come across this amazing seed, you may be asking what exactly a Chia seed is? Chia seeds are the edible seeds of a flowering plant from the mint family, and even though they are really small (and sometimes get everywhere), they are jam-packed full of nutrients. They are an excellent source of omega-3 fatty acids, fiber, protein and minerals (including iron, calcium, magnesium and zinc). If you have been following my blog for a while, you will know that I love to use them as an egg-replacement in baking and I do so love a cool Chia pudding. They are simple to make and can have many different variations.

Ingredients

This is what you will need to make a Chia seed pudding:

  • 350ml-400ml Glass Jar
  • 4-6 Tablespoons Chia seeds (This can be adjusted to what you prefer – more of a pudding or more of a Chia drink)
  • 5ml Vanilla Extract
  • 1 – 2 tablespoons Honey / Maple Syrup (amount can be adjusted according to your preference, you can also use a different sweetener if you do not want to use honey or syrup)
  • Almond Milk (or whichever milk you prefer)
  • You will also need whatever toppings you wish to add such as dried fruit, fresh fruit, mixed seeds, etc.

Directions

  1. Pour honey or maple syrup into jar.
  2. Pour milk into the jar until it is 3 quarters full.
  3. Add Chia seeds and mix everything together.
  4. Add Vanilla Extract, close lid, put on some really fun music, and shake (the jar and you)!
  5. Refrigerate.
  6. Take it out of the fridge, put in your favourite dish/glass and add your toppings; or you can just eat/drink it straight from the jar.

Tips: Now their are two ways of doing this. Some prefer leaving this out until fully mixed, some put it straight in the fridge. Either way, you will need to shake it/mix it again after a little while to prevent clumps from forming. I like to pop it straight in the fridge as I am preparing for the next day and shake it again just before I get into bed. They usually last for up to a week, so you can make a week’s worth at the beginning of the week for you and your family to enjoy.
