1000 Island Holiday Pasta Salad

During the festive season, it is a bit different where we are. Instead of snow and reindeer, we have beaches and braais. Instead of being wrapped in a blanket near the fire, we are spending afternoons near the swimming pool or exploring nature. So, we tend to opt for some cooler ‘sides’ for our family meals, and I have a recipe you can add to your family recipe book! Fresh, with festive colours, this is the perfect salad to have all year round but especially at Christmas.

Ingredients

  • 500g Bag Bow Tie Pasta (Farfalle) / your favourite pasta – We also made a gluten-free option with gluten-free pasta
  • 1 Bottle / 340ml 1000 Island Dressing (or make your own)
  • 250g Cherry/Plum Tomatoes
  • 1 Red Onion (Diced)
  • 150g Cheddar Cheese (Diced)
  • 150g Gouda Cheese (Diced)
  • A packet of diced bacon (Cooked) – Optional, but we love it with bacon. You could also add chicken.
  • Fresh Basil/Parsley – Optional
  • Robot Peppers – Optional, but adds great colour!

Instructions

  1. Cook your pasta and allow it to cool.
  2. Mix the pasta with your dressing until evenly coated.
  3. Add the rest of your prepared ingredients.
  4. Refrigerate for a minimum of 2 hours before serving.
